chef you are definitely wrong on making cooked rice i leave in iran and we eat rice every day but what you did just wasnt whta we do.i suggest you learn about it.

The Sharpening steel doesn't actually sharpen. It hones the blade, which straightens out the edge, and is more a maintenance thing of an already sharp knife than a sharpen a blunt knife thing. Sharpening requires physical grinding of the edge, which can be accomplished by various As-seen-on-TV products with varying degrees of success, or the tried and true method of whetstones. Once you start properly sharpening your knife, you'll never go back, you'll be amazed at how much of a difference it makes.

that's called star anise. They have a pretty strong flavour, make sure not to use too much!
Using a steel does not sharpen a knife, ya donut! 😜 It hones and defines the edge, but only a sharpening stone can sharpen a knife. “The only thing more dangerous than a sharp knife is a dull knife.” And I’m not sure about the 45 degree angle. I was always taught 20 degrees.

@Phray01 Gotcha. But it does define the edge. Really, you absolutely need to use a steel after sharpening with a whetstone. Not only does it define the edge, but it will remove any burrs on the blade from the sharpening process. He is right that you should use the steel before every use, but using a whetstone should only need to be done periodically. That said, a steel still does not sharpen a knife unless it’s Luke a diamond dust steel. Personally, after decades of screwing around with expensive knives, anymore I say just buy a cheap chef’s knife, use one of those $10 yo-yo sharpeners on it along with the steel, and if it lasts you more than a year, you’ve done well. Also be leery of any knife that claims it never needs to be sharpened. Every knife gets dull, but those that make that claim have knives that can’t be taken to a whetstone.

Two things Gordo, one: you can't "sharpen" a knife with a honing steel, you only straighten and realign the blade at a microscopic level. Two: adding oil to boiling pasta may keep the pasta from sticking but it also prevents a beautiful sauce from sticking to the pasta.

Basmati Rice is the "Queen" of rice. Great video, however, I never thought I would suggest something to you. I learned the Persian way of cooking rice when I was in my early 20's and I have never cooked it any other way since. Same prep steps, except par boil rice. I add a thin layer of oil on the bottom of a thick gauge pot and place thinly sliced potatoes, a tortilla, or a rice yogurt mixture on top of oil then place my par boiled rice. I poke holes in the rice mound for an even steam then place a towel over the top then the lid.. DO NOT LIFE LID until you smell the nutty aroma of the rice.

Is it just me or did Gordon seem more excited cooking rice than normally?
There's absolutely no need to add oil in boiling water to cook pasta, that's just a waste of extra virgin olive oil that's also quite expensive if it's pure and of high quality; just use big pots, stir when you put pasta into the pot and keep stiring every 2/3 mins. Indeed, from a chemical point of view, water and oil form a mixture when stired, not a solution, therefore the two will remain separate and all of the oil will float on the water very soon, so adding it it's simply pointless and wasteful. Also, add salt just in the water and in the condiments, not when you drain the pasta otherwise it won't be evenly distributed and, also, it's the best way to make it over salted.
